Water molecular structure behind water activity: investigating on chemical modifications of rice germ during storage (Abstract)
Bio
Cristina Malegori received in 2015 her PhD in Technological Innovation for Agricultural, Nutritional and Environmental Sciences. Now she works as a post-doctoral fellow in the Research Group in Analytical Chemistry and Chemometrics at the University of Genova. Her research activity is mainly focused on the application of innovative analytical strategies based on near-infrared spectroscopy and hyperspectral imaging. An important topic of her research is the extraction of significant information embodied within complex data arrays by means of advanced chemometric techniques. With her background in food science and technology, Cristina mainly applies this approach to food samples, with the aim of understanding the complex biochemical activities that occur during food processing/degradation. She is secretary and treasurer of the board of the Italian Society of NIR Spectroscopy (SISNIR).
